After a bit of a break (posting, not vegan-ing!), back with last night's dinner: roasted broccoli, pan-fried plantains, lentils, hot sauce.

The last of the gallo pinto, along with breaded baked cauliflower (used an egg in the breading, so not really vegan..) with a mix of thai sweet chili and sriracha sauce. Bad photo, great meal!

 

Snacks throughout the day instead of a real lunch.

Another breakfast green juice. (broccoli stalks, cucumber, granny smith apple, lemon, ginger, celery, spinach.) I'm getting used to this..

Dinner: whole wheat cous cous with pine nuts, chickpea crockpot curry (chickpeas, onion, garlic, curry powder, tumeric, garam masala, ginger, cumin, cayenne, cilantro), green pepper, some iced decaf green + chamomile tea.
Epic 3+ hour bike ride to run some errands required a snack on the road.

Dinner:
Gallo pinto (brown/red/wild rice mix, black beans, garlic, onions, red peppers, a ton of cilantro.)
Tofu seared in olive oil, with sea salt and cayenne pepper. (with thai sweet chili sauce on the side.)
Sliced cucumbers and green peppers.
Decaf green + mint tea.

Let's see if I can keep this vegan thing up! the goal is to post a picture of every meal to give myself some accountability.
