Dinner:
Gallo pinto (brown/red/wild rice mix, black beans, garlic, onions, red peppers, a ton of cilantro.)
Tofu seared in olive oil, with sea salt and cayenne pepper. (with thai sweet chili sauce on the side.)
Sliced cucumbers and green peppers.
Decaf green + mint tea.

Let's see if I can keep this vegan thing up! the goal is to post a picture of every meal to give myself some accountability.
